I started eating peanut butter & jelly (PB&J) sandwiches again. Why is this a big deal you may ask? Well, I grew up during the time when the “low-fat high-carb diet” was all the rage and peanut butter was not considered good to eat due to its “high” fat content. Everyone flocked to this new diet and if you didn’t follow it there were plenty of folks lined up to diet-shame you and ring bells to convert you. Shame….Shame….
So I put a self-imposed embargo on peanut butter, even though I loved how it tasted. Over the years I still had an occasional bite here and there when my wife brought home a jar, but never a full serving.
When I started working with a personal trainer to lift weights properly, the trainer & nutritionist said I needed to start eating more healthy fats. This included avocados, nuts, seeds and salmon amongst others. But then I clarified if I could eat peanut butter and they said yes, a FULL serving of peanut butter!
As soon as I left work, I raced to my local super market and bought a jar of all-natural peanut butter with only 2 ingredients (peanuts & salt), Ezekiel raisin bread, and organic jam/jelly. (Note: you can also go to Whole Foods and make your own peanut butter.) Now the peanut butter is the star of the show but the jam/jelly makes this a truly memorable meal. And strawberry jelly is my jam!
And then I made the best PB & J sandwich I have ever had! PB&J was back, mo’ better, and healthier than ever! It is now a mainstay of my weekly meals.
Besides tasting like a slice of heaven, here are a few other bites of info about peanut butter:
Peanut butter is good for you and is a powerhouse of nutrition. It’s a heart healthy fat that is nutrient rich and is an antioxidant. These “good” fats help lower cholesterol, reduce heart disease, and are also anti-inflammatory.
It’s nostalgic. Whenever I eat a PB & J it brings me back to when I was a youth/ute. And it brings a smile to my face every time. Growing up, my mom would make our school lunches and while I had my favorites, PB&J was my mostest favorite. Whenever I opened up my brown paper bag and saw a PB&J, it made my day!
It’s the mother of all invention. People make thousands of recipes with it such as Thai chicken pizza, chocolate peanut butter & date dessert (Gail makes these) and chocolate Peanut Butter avocado pudding. People also make gadgets just for peanut butter (spoons and at-home grinders where you can grind your own peanut butter). But the latest is a gadget that allows you to easily mix the oil for you in the jar. If you buy an all-natural peanut butter, you’ll notice that the peanut oil is always at the top of the jar.
There’s nothing worse than trying to mix the peanut oil into the semi-solid peanut butter. No matter how hard I have tried, I always ended up getting oil on the kitchen counter, and losing precious oil to make a smooth consistency.
But finally, an inventive genius/saint/2018 Time Man of the Year/future Nobel Peace Prize winner, created the best gadget for peanut butter fans. When I saw the video from Jimmy Kimmel, I knew I had to buy this. Its’s called Grandpa Witmer’s Peanut Butter Mixer and works exactly as advertised.
