Here it is, a few days before Christmas, and I’ve made these cookies 5 times (6 batches) since Thanksgiving. They are a favorite of mine, and they are sooo easy.
I love a dump and bake recipe and that is exactly what this is. No fancy ingredients or fancy cooking tools — just the basics, and of course…. PUMPKIN!
One of my friends has a Pumpkin-palooza party every year. Year after year, a group of us gals all bring our faves. I like to mix it up… some years are savory, some years are sweet. But, one staple that always shows up are these Pumpkin Chocolate Chip Cookies. Everyone loves them, every time.
I bring them to work, bring them to neighbors, bring them to Holiday parties, and they always get rave reviews. One could argue that they are “basic,” as everyone knows it is PSL season, but these are just different enough that they don’t qualify for Basic B!tch material.
Without further ado, here it is, the best, most popular recipe I have ever used, made or shared:
1 Can Pumpkin (not pumpkin pie filling)
1 Cup Sugar (I use around 2/3 Cup)
1/2 teaspoon salt
1/2 teaspoon butter
1 teaspoon vanilla
2 Cups unsifted flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 package (or less) dark chocolate chips ( you can use any chocolate chips you like, I prefer the dark over the milk or semi-sweet)
Preheat oven to 375 degrees F.
Put all ingredients in mixing bowl. Mix until combined.
Drop by spoonfuls onto greased cookie sheet. Bake for 12-14 minutes.
Cookies end up with a cake-like texture and this recipe yields about 4 dozen cookies!
